It’s also a good excuse to eat, drink, and be merry! So much so, in fact, that the Irish have a saying: “It is pleasant with company at the table; woe to him who eats alone.

So, this March 17th, make sure your table is full of friends and family by whipping up a stunning three-course meal comprised of these comforting, CBD-infused St. Patrick’s Day recipes.

CBD Spinach Artichoke Dip 

This mouthwatering dish has been adapted from Lena Abraham’s Ultimate Spinach Artichoke Dip recipe over on Delish.com. We’ve given it a soothing spin by adding natural-flavored CBD drops to the mix, and the super simple, super tasty side makes for the perfect addition to a chilled-out St. Patrick’s Day party.

Serve with crackers, chips or bread and watch it vanish.

Ingredients

  • 2/3 cup of softened cream cheese
  • 3/4 cup of mayonnaise
  • 3/4 cup of sour cream
  • 1 cup of shredded white cheddar (grate a little extra for the topping)
  • 1 cup of freshly grated Parmesan
  • 1/2 cup of shredded Gruyère
  • 2 cloves of garlic, minced
  • One 14-oz. can of artichoke hearts, drained and chopped
  • One 10-oz. pack of frozen spinach, defrosted and chopped
  • 30 drops of Natural-flavor CBD Oil Drops
  • 1 teaspoon of lemon zest
  • 1/2 teaspoon of red pepper flakes
  • Salt and pepper to season

Directions

  1. Preheat your oven to 320°F (160°C).
  2. Meanwhile, add all of the ingredients into a large bowl, including the CBD oil drops. Mix well until fully combined. Season with salt and pepper.
  3. Transfer the dip mix to an oven-proof baking dish and smooth the surface with a spatula.
  4. Top with the extra shredded white cheddar and place into the oven.
  5. Bake the dip for around 30-35 minutes, until it goes bubbly and lightly golden.
  6. Serve with your choice of bread, crackers, or chips.

*REMEMBER: When cooking with CBD oil, it’s important that you avoid exposing it directly to high heat. Doing so can compromise its potency and impact its overall effectiveness.

Corned Beef and Cabbage (and CBD)

Now for a main course that’ll have your tastebuds dancing a jig. Corned beef and cabbage is a St. Paddy’s Day staple in America, and it’s so hearty and filling you’ll be left wondering if you have room for dessert.

Don’t worry, you will!

Inspiration for this recipe comes from the team at Good Housekeeping. Once again, we’ve tweaked the ingredients to include CBD oil, elevating this classic corned beef and cabbage recipe to new levels of soothing satisfaction.

Ingredients

  • One 3 lb piece of corned beef
  • One 12-oz bottle of pale ale
  • 1 small head of green cabbage, cut into 8 wedges
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 dried bay leaves
  • 2 tablespoons of olive oil
  • Salt and pepper to season
  • 30 drops of Natural-flavor CBD Oil Drops
  • Chopped parsley, for serving

Directions

  1. Place the corned beef in a large, deep pot. Add the pale ale, chopped onion, garlic and bay leaves. Pour in 1 and a half cups of water and bring to the boil, before reducing the heat and simmering (covered) for around 2 and a half to 3 hours. The meat should be tender and easily pierced with a fork.
  2. Around 30 minutes before the corned beef is finished cooking, preheat your oven to 425°F.
  3. Next, heat a large cast-iron skillet on a medium-to-high heat. Season the cabbage wedges with a pinch of salt and pepper, add 1 tablespoon of olive oil to the pan, and cook 4 wedges until golden brown (around 3 minutes per side). Repeat for the next 4, then transfer all 8 cooked wedges to a baking sheet.
  4. Place the corned beef on a foil-lined baking sheet, and transfer the beef and cabbage to the oven. Roast until the beef has browned and the cabbage is tender (around 12 to 15 minutes).
  5. Once ready, thinly slice the beef, and drizzle the cabbage wedges with the CBD oil. Sprinkle with parsley and serve.

“Luck o’ the Irish” CBD Chocolate Brownie

Finally, a fitting dessert for a St. Patrick’s Day feast. This visually appealing, delicious and decadent Irish brownie mix has been adapted from a recipe by Cher on Allrecipes.com.

Chocolatey, minty, and with a calming kick of CBD, what’s not to love?

Ingredients

For the Irish brownie batter

  • Four 1 ounce squares of unsweetened chocolate
  • 1 cup of margarine, softened
  • 1 cup of all-purpose flour
  • 3 large eggs, beaten
  • 2 cups of white sugar
  • 2 and a 1/2 teaspoons of vanilla extract

For the peppermint layer

  • 1/2 cup of butter, softened
  • 4 cups of confectioners’ sugar
  • 2 tablespoons of milk (or as needed)
  • 1 and a 1/2 teaspoons of peppermint extract
  • 6 drops of green food coloring

For the dark chocolate topping

Directions

  1. Preheat your oven to 320°F (160°C). Next, grease a 9×13 inch baking dish and set aside.
  2. Melt the unsweetened chocolate squares in a small pan over low-to-medium heat, stirring gently until the chocolate is smooth. Allow it to cool slightly before transferring to a large mixing bowl. Stir in the softened margarine and white sugar and mix until smooth.
  3. Add the eggs and vanilla extract, then stir in the flour until blended.
  4. Pour the brownie batter into your greased baking dish and spread evenly with a spatula.
  5. Transfer the dish to the oven. Bake for around 25 minutes, or until the surface takes on a papery crust and the sides begin to pull away from the sides of the pan. Remove from the oven and set the dish over a wire rack to cool.
  6. Now for the peppermint layer: Using an electric mixer, beat the 1/2 cup of butter with the confectioners’ sugar in a large bowl. Slowly add the milk as required to help you achieve a thick, spreadable mixture.
  7. Next, stir in the peppermint extract and green food coloring. Evenly spread over the cooled brownies and refrigerate for around 30 minutes.
  8. Meanwhile, gently heat the CBD chocolate with the butter over low heat to make the top layer. Stir with a wooden spoon until smooth, remove from heat and mix in the vanilla extract.
  9. Finally, pour the chocolate over the chilled green layer and spread evenly to cover the entire surface. Chill until firm and then cut into squares and serve.
